- In a small bowl, mix the fish sauce, palm sugar, and Thai chili flakes and stir until sugar dissolves to create dressing (about 1-2 minutes).
- Peel and slice the green mango into thin strips or cubes and place in a large bowl.
- Add the sliced shallots to the bowl with the mango.
- Pour in the roasted peanuts and drizzle the dressing over the top, tossing gently to combine without crushing the mangoes.
- Top with crispy fried shallots if using, and serve immediately to maintain freshness.
Notes
For best flavor, allow sugar to dissolve completely in the dressing and enjoy immediately. Can be prepared in advance but dress shortly before serving.
