  • 1.5 tablespoons fish sauce Look for high-quality fish sauce, like Red Boat.
  • 1.5 tablespoons palm sugar Brown sugar can be used as a substitute.
  • to taste Thai chili flakes Adjust according to your heat preference.
Salad
  • 1 green mango, firm and sour Ensure it's slightly firm for crunch.
  • 3 shallots, thinly sliced Use fresh shallots for best flavor.
  • 1 handful roasted peanuts Unsalted or lightly salted is preferred.
  • 1 handful crispy fried shallots (optional) Adds extra crunch and flavor.

Preparation
  1. In a small bowl, mix the fish sauce, palm sugar, and Thai chili flakes and stir until sugar dissolves to create dressing (about 1-2 minutes).
  2. Peel and slice the green mango into thin strips or cubes and place in a large bowl.
  3. Add the sliced shallots to the bowl with the mango.
  4. Pour in the roasted peanuts and drizzle the dressing over the top, tossing gently to combine without crushing the mangoes.
  5. Top with crispy fried shallots if using, and serve immediately to maintain freshness.

Notes

For best flavor, allow sugar to dissolve completely in the dressing and enjoy immediately. Can be prepared in advance but dress shortly before serving.
