  • 1.5 kg wild boar roast Look for pasture-raised or organic options.
  • 2 tbsp olive oil Use extra virgin for best flavor.
  • 1 tsp salt Kosher salt preferred.
  • 1 tsp black pepper Freshly ground for best aroma.
  • 2 sprigs rosemary Fresh is ideal.
  • 3 cloves garlic, minced Use fresh for a punchy flavor.
  • 1 medium onion, chopped Yellow onions add depth.
  • 1 cup red wine Choose a good quality wine you would drink.
  • 1 cup beef broth Homemade if possible, otherwise low-sodium.

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. Rub the wild boar roast thoroughly with olive oil, and season it with salt and freshly ground black pepper.
  3. Heat a pan over medium-high heat, sear the roast on all sides until browned (about 2-3 minutes per side).
  4. In a roasting pan, layer the chopped onion, fresh rosemary, and minced garlic.
  5. Place the seared wild boar roast on top of the onion mixture, and pour in the red wine and beef broth.
  6. Cover the pan with foil and roast for approximately 2 hours, basting with the juices every 30 minutes.
  7. After roasting, let the meat rest for 10 minutes before slicing.

Notes

Serve with creamy mashed potatoes and sautéed green beans for the perfect meal. Storage: Refrigerate leftovers within two hours for up to three days.
