Preparation
- Preheat the oven to 180°C (350°F).
- Rub the wild boar roast thoroughly with olive oil, and season it with salt and freshly ground black pepper.
- Heat a pan over medium-high heat, sear the roast on all sides until browned (about 2-3 minutes per side).
- In a roasting pan, layer the chopped onion, fresh rosemary, and minced garlic.
- Place the seared wild boar roast on top of the onion mixture, and pour in the red wine and beef broth.
- Cover the pan with foil and roast for approximately 2 hours, basting with the juices every 30 minutes.
- After roasting, let the meat rest for 10 minutes before slicing.
Notes
Serve with creamy mashed potatoes and sautéed green beans for the perfect meal. Storage: Refrigerate leftovers within two hours for up to three days.
