- Preheat your oven to 400°F (200°C) to ensure your cod cooks evenly.
- Prepare your roasted red peppers: If using jarred roasted peppers, drain and rinse them to remove excess brine. If making your own, roast them under the broiler until charred and blistered, then peel off the skin and remove seeds.
- In a blender, combine the roasted peppers, minced garlic, and a tablespoon of olive oil. Blend until smooth. Season with salt and pepper to taste.
- Rinse your cod fillets under cold water and pat them dry with a paper towel. Place them in a greased baking dish, ensuring they’re not overcrowded.
- Pour the roasted red pepper sauce over the fillets, ensuring they’re generously covered.
- Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- For a golden top, broil for the last 2-3 minutes—just keep a close eye on them!
- When you pull the dish out of the oven, drizzle with the remaining olive oil and garnish with fresh parsley for that perfect presentation.
- Enjoy warm, alongside a side of fluffy rice or crusty bread for dipping into that incredible sauce.

For a gluten-free version, ensure your ingredients are certified gluten-free. You can also substitute cod with a firm white fish like halibut or tilapia. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
