Method
Prepare the Pastry Shells
- Thaw the puff pastry sheets according to package directions.
- Lightly roll them out on a floured surface.
- Cut into circles large enough to fit into your tart molds.
- Gently press the pastry into the molds.
- Chill the pastry shells in the refrigerator for about 15-20 minutes while you prepare the custard.
Make the Custard Filling
- In a bowl, dissolve the sugar in hot water and let it cool to room temperature.
- In a separate bowl, beat the eggs gently.
- Gradually add the evaporated milk, vanilla extract, salt, and the cooled sugar solution.
- Strain the custard mixture through a fine mesh sieve into a pourable container to ensure a smooth filling.
Bake the Tarts
- Preheat your oven to 375°F (190°C).
- Pour the custard into the chilled pastry shells, filling them about 80-90% full to allow expansion.
- Bake for 25-30 minutes until the custard jiggles slightly in the center and the tops are lightly golden.
- Keep an eye on them towards the end, as ovens vary!
Notes
Store any leftover tarts in an airtight container in the fridge for up to 3 days. They freeze well for 1 month. Keep the custard mixture cool before pouring to maintain consistency.
