Method
Preheat & Season
- Preheat oven to 325 degrees F.
- Season chuck roast generously with kosher salt and ground black pepper.
Sear the Meat
- In a large skillet, heat a few drizzles of oil over medium-high heat.
- Sear the seasoned chuck roast on both sides until a golden brown crust forms, about 5-6 minutes per side.
- Let it sear undisturbed for extra flavor.
Prepare for Braising
- Transfer the seared roast into a large 4-quart baking casserole pan with a lid.
- Arrange sliced onions and fresh herbs around the roast.
Create the Braising Liquid
- In a microwave-safe bowl, warm up the beef broth until hot but not boiling.
- Add in balsamic vinegar, Worcestershire sauce, honey, mustard, and minced garlic.
- Season with salt and pepper to taste. Stir to combine evenly.
Combine & Braise
- Pour the braising liquid over and around the beef.
- Cover tightly with the lid or aluminum foil.
- Braise in the oven for 3.5 hours until fork-tender.
Serve & Enjoy
- Remove from oven and shred with a fork, tossing to combine with the juices.
- Serve over mashed potatoes or your favorite sides.
Notes
Invest in good balsamic vinegar and broth for better flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
