Ingredients

Main Ingredients
  • 6 oz Tomato Paste Opt for a high-quality brand like Muir Glen or San Marzano for richer flavor.
  • 1/2 cup Water Filtered water enhances the freshness.
  • 1/3 cup Apple Cider Vinegar A must for its slightly sweet and tangy profile—Bragg is a solid choice.
  • 4 tablespoons Honey Local or organic honey adds depth; substitute with maple syrup for a vegan alternative.
  • 1/2 tablespoon Onion Powder Ensure it’s fresh for maximum flavor.
  • 1/2 tablespoon Garlic Powder Just like onion powder, fresh is best here too.
  • 1 pinch Salt Sea salt enhances overall flavor without overwhelming.

Method

Preparation
  1. In a medium saucepan, mix together all the ingredients until thoroughly combined.
  2. Bring the mixture to a gentle simmer over medium heat.
  3. Once simmering, reduce the heat to low and semi-cover the saucepan, allowing the steam to escape while they cook. Let it simmer gently for about 20 minutes.
  4. Occasionally stir to prevent sticking and ensure even cooking.
  5. When it’s a luscious thickness, remove from the heat and allow it to cool in the pan for about 10 minutes.
  6. Pour the cooled ketchup into a sterilized glass container and refrigerate for at least a few hours before using.
  7. Store in an airtight container for up to 4 weeks.

Notes

Quality matters: Use the best tomatoes you can find; consider substituting fresh, ripe tomatoes roasted first for added rich flavor. Adjust sweetness by adding more honey if desired and balance it with extra vinegar.
