Heavenly Mango Coconut Agar Agar Jelly

Ingredients
  

For the Mango Layer
  • 250 g mango flesh, roughly cubed (about 1 fresh mango, ripe and fragrant) Use ripe mangoes for the best flavor.
  • 1/2 cup orange juice Freshly squeezed is best for vibrant flavor.
  • 1 1/4 cups water For mixing with agar agar.
  • 2 tsp agar agar powder Look for good quality brands for better results.
  • 1/3 cup sugar Adjusted to taste.
  • to taste lime juice Try fresh if you can!
  • 15 small mint leaves Optional for garnish.
For the Coconut Layer
  • 2/3 cup water For mixing with agar agar.
  • 1 tsp agar agar powder
  • 4 Tbsp sugar Feel free to adjust according to your taste.
  • 1/8 tsp salt
  • 2/3 cup coconut milk Full-fat recommended for a rich texture.

Method
 

For the Mango Layer
  1. Blend the mango cubes and orange juice until smooth.
  2. In a small pot, whisk together water and agar agar powder. Bring to a gentle boil over medium heat, stirring frequently.
  3. Once boiling, add sugar and mango puree, whisking until fully combined.
  4. Taste the mixture and adjust sweetness with more sugar or lime juice.
  5. Pour the mixture into a jelly mold and add diced mango pieces. Let it set for about 30-40 minutes at room temperature.
For the Coconut Layer
  1. In another pot, combine water and agar agar. Bring to a boil, stirring well.
  2. Add sugar, salt, and coconut milk, stirring until fully combined, then remove from heat.
  3. Once the mango layer is set, gently pour the coconut layer over it.
  4. Refrigerate for at least 3-4 hours to chill and set.
Serving
  1. Once fully chilled, cut into cubes and enjoy, optionally garnishing with mint leaves.

Notes

Store leftovers in the refrigerator for up to 3-4 days. Can be made a day in advance for better flavor.
