Method
For the Mango Layer
- Blend the mango cubes and orange juice until smooth.
- In a small pot, whisk together water and agar agar powder. Bring to a gentle boil over medium heat, stirring frequently.
- Once boiling, add sugar and mango puree, whisking until fully combined.
- Taste the mixture and adjust sweetness with more sugar or lime juice.
- Pour the mixture into a jelly mold and add diced mango pieces. Let it set for about 30-40 minutes at room temperature.
For the Coconut Layer
- In another pot, combine water and agar agar. Bring to a boil, stirring well.
- Add sugar, salt, and coconut milk, stirring until fully combined, then remove from heat.
- Once the mango layer is set, gently pour the coconut layer over it.
- Refrigerate for at least 3-4 hours to chill and set.
Serving
- Once fully chilled, cut into cubes and enjoy, optionally garnishing with mint leaves.
Notes
Store leftovers in the refrigerator for up to 3-4 days. Can be made a day in advance for better flavor.
