Preparation

- In a bowl, whisk together the eggs and heavy cream until smooth. Season with salt and pepper.
- Spread the sautéed vegetable mix evenly in a baking dish. Pour the cream mixture over the top.
- Sprinkle the grated cheese evenly across the surface.
Cooking
- Bake the casserole in the oven for 25 to 30 minutes.
- Look for a golden brown, puffed up, and set top. Poke with a knife; if it comes out clean, it's done.
- Let it rest for about 5 minutes before serving.
- Optionally, broil for 1-2 minutes for extra bubbly cheese, watching closely.
