Preparation
- Lightly grease a microwave-safe mug, ramekin, or small bowl with a bit of coconut oil.
- In your chosen vessel, mix together the egg, pumpkin puree, coconut flour, sweetener, vanilla extract, pumpkin spice, and baking powder until you have a smooth batter.
Cooking
- Place your mug in the microwave and cook on high for 2 minutes, keeping an eye on it.
- Once done, carefully remove from the microwave.
Serving
- Top with a dollop of yogurt or a scoop of ice cream if desired. Enjoy warm!
Notes
Store leftovers in the fridge for up to 3 days or freeze for up to 2 months. Thaw overnight before enjoying.
