Preparation
- Preheat your oven to 350°F (180°C) and line a loaf pan with baking paper.
- In a large mixing bowl, mix together the wet ingredients until smooth and creamy.
- Gently fold in the dry ingredients until just incorporated.
- Fold in the chocolate chips carefully.
Baking
- Pour the batter into the prepared loaf pan and sprinkle extra chocolate chips on top.
- Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
- Allow to cool for 10 minutes in the pan, then transfer to a wire rack.
Notes
Store at room temperature for up to 2 days, in the fridge for about a week, or freeze for up to 3 months. Try different spices or add-ins like walnuts or dried fruits for variety.
