  • 2 pieces eggs or flax eggs Flax eggs: mix 1 tbsp flaxseed meal with 2.5 tbsp water per egg.
  • 3 tablespoons honey or maple syrup Maple syrup adds a deeper flavor.
  • 2 teaspoons vanilla extract Use good-quality vanilla for best flavor.
  • 3 tablespoons melted coconut oil Can be replaced with unsalted butter.
Dry Ingredients
  • 2.5 cups oat flour Use gluten-free if needed.
  • 2 teaspoons baking powder Use fresh for optimal rise.
  • 1 teaspoon cinnamon Adds aromatic flavor.
  • 1 teaspoon sea salt Balances the sweetness.
  • cup chocolate chips Extra for sprinkling on top.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and line a loaf pan with baking paper.
  2. In a large mixing bowl, mix together the wet ingredients until smooth and creamy.
  3. Gently fold in the dry ingredients until just incorporated.
  4. Fold in the chocolate chips carefully.
Baking
  1. Pour the batter into the prepared loaf pan and sprinkle extra chocolate chips on top.
  2. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  3. Allow to cool for 10 minutes in the pan, then transfer to a wire rack.

Notes

Store at room temperature for up to 2 days, in the fridge for about a week, or freeze for up to 3 months. Try different spices or add-ins like walnuts or dried fruits for variety.
