- Preheat your oven to 350°F (175°C) and grease a loaf pan with cooking spray or line it with parchment paper for easy removal.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add honey (or maple syrup), eggs, and vanilla extract to the mashed bananas and mix well until fully combined.
- In another bowl, combine almond flour, baking soda, and salt, whisking together to ensure even distribution.
- Pour the dry mixture into the wet mixture and gently fold until just combined, taking care not to overmix.
- Pour the batter into the prepared loaf pan, ensuring it's evenly distributed.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely before slicing.
Notes
For enhanced flavor, let the banana bread rest overnight before slicing. Store in an airtight container at room temperature for up to 2 days or in the fridge for up to a week.
