Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with cooking spray or line it with parchment paper for easy removal.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add honey (or maple syrup), eggs, and vanilla extract to the mashed bananas and mix well until fully combined.
  4. In another bowl, combine almond flour, baking soda, and salt, whisking together to ensure even distribution.
  5. Pour the dry mixture into the wet mixture and gently fold until just combined, taking care not to overmix.
  6. Pour the batter into the prepared loaf pan, ensuring it's evenly distributed.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely before slicing.

Notes

For enhanced flavor, let the banana bread rest overnight before slicing. Store in an airtight container at room temperature for up to 2 days or in the fridge for up to a week.
