  • 1.5 to 2 pounds ground beef Choose lean or extra-lean for less grease.
  • 1 medium onion, diced Fresh onions will add sweetness to the dish.
  • 2 packets taco seasoning For the best flavor, look for a low-sodium option or make your own.
  • 2/3 cup water Helps blend the seasoning evenly.
  • 1 10-ounce can Rotel tomatoes with green chilies Adds a zesty kick!
  • 1/2 to 1 cup black beans, rinsed and drained A fantastic source of fiber.
  • 1 cup sour cream Use full-fat for a creamier texture.
  • 1 large bag Nacho Cheese Flavored Doritos For that quintessential crunch.
  • 3 cups shredded Mexican cheese A blend of cheddar and Monterey Jack works wonders.
For Serving
  • to taste Chopped fresh cilantro
  • to taste black olives
  • to taste shredded iceberg lettuce
  • to taste pickled jalapeños

Method
 

Preparation
  1. Allow your ground beef to come to room temperature before cooking for more even browning.
  2. Have your sour cream at room temperature to ensure it mixes smoothly into the beef mixture.
Cooking
  1. In a large nonstick skillet over medium heat, brown and crumble the ground beef for about 5-7 minutes. Drain off any excess grease.
  2. Stir in the diced onion and cook until softened, about 3 minutes.
  3. Sprinkle the taco seasoning evenly over the beef and mix in the 2/3 cup of water. Cook until the mixture thickens, about 2-3 minutes. Remove from heat and stir in black beans and sour cream until combined.
  4. Preheat your oven to 350°F (175°C). Spray a 9x13 inch baking dish with cooking spray.
  5. Start by covering the bottom of the dish with about 2 cups of crushed Doritos.
  6. Add half of the beef mixture on top of the Doritos, then sprinkle half of your shredded cheese. Add another layer of 2 cups of crushed Doritos and top with the remaining beef mixture. Finish with the remaining cheese and another 2 cups of Doritos on top.
  7. Bake in your preheated oven for 25 minutes until the cheese is bubbling and golden.
  8. Let it cool for a few minutes, then serve with your favorite toppings.

Notes

For best results, always brown your meat over medium heat to avoid steaming it. This casserole can be stored in the fridge for up to 3 days in an airtight container. Reheat in the oven for the best texture.
