Grilled Chipotle BLT Cheeseburgers

Ingredients
  

Chipotle Mayonnaise
  • 4 tbsp mayonnaise Recommended: Hellmann's for creaminess
  • 1 tbsp chipotle powder Recommended: McCormick for consistent quality
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp lime juice Freshly squeezed is best
Burger Ingredients
  • 1 lb lean ground chuck (20% fat) For juicy burgers
  • Salt & pepper To taste
  • 4 slices Havarti cheese Creamy and melty!
  • 4 buns brioche Soft and sweet flavor
  • 8 slices bacon (cooked) Crispy, please!
  • 1 large tomato (sliced) The juicier, the better
  • Lettuce Iceberg preferred for crunch
  • Ketchup, mustard, pickles Customize as you like

Method
 

Preparation
  1. In a small bowl, combine mayonnaise, chipotle powder, garlic powder, onion powder, and lime juice. Mix well until smooth.
Cooking
  1. Cook bacon slices until crispy. Keep warm in a low oven.
  2. In a bowl, mix ground chuck with salt and pepper. Form into 4 even patties with a slight indent in the center.
  3. Preheat the grill to medium-high heat (about 400°F). Grill the patties for about 4-5 minutes per side until internal temperature reaches 160°F. Add a slice of Havarti cheese in the last minute.
  4. Toast brioche buns on the grill for about 1 minute until golden brown.
Assembly
  1. Spread chipotle mayonnaise on each bun, then add the burger patty, crispy bacon, lettuce, and tomato. Cap it with the top bun.
