Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Make sure to use quality butter for that rich flavor. I recommend Kerrygold.
  • 1 cup granulated sugar Use organic cane sugar if you prefer a less refined option.
  • 2 large eggs Room temperature eggs work best.
  • 1 tablespoon vanilla extract Use pure vanilla extract for an aromatic kick.
  • 2.5 cups all-purpose flour Spoon the flour into your measuring cup and level it to avoid dry cookies.
  • 0.5 teaspoon baking powder Provides a little lift.
  • 0.5 teaspoon baking soda Helps the cookies spread just the right amount.
  • 0.5 teaspoon salt Enhances all flavors.
For the Glaze
  • 0.25 cup unsalted butter Melted for luxurious richness.
  • 0.5 cup granulated sugar Provides necessary sweetness.
  • 1 tablespoon water Helps create a smooth consistency.
  • 1 teaspoon vanilla extract Adds a lovely aroma.
  • 0.75 cup powdered sugar Gives the glossy finish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 4-5 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the butter mixture until a soft dough forms.
  6. Use a medium cookie scoop to drop dough onto prepared baking sheets, spacing them 2 inches apart.
Baking
  1. Bake for 10-12 minutes, until the edges are golden and the centers are set.
  2. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.
Glazing
  1. In a saucepan, melt the butter over low heat. Stir in the granulated sugar and water; cook until dissolved.
  2. Remove from heat and stir in vanilla extract and powdered sugar until smooth and glossy.
  3. Spoon the glaze over warm cookies and allow to set for about 10 minutes before serving.

Notes

Store in an airtight container at room temperature for up to a week, or in the fridge for up to two weeks. Freezing unglazed cookies is also an option, just glaze once thawed.
