  • 2 tablespoons fresh ginger, grated Fresh ginger adds a bold taste; ground ginger can be used in a pinch.
  • 2 cloves garlic, minced Fresh garlic gives the best flavor, but garlic powder can work temporarily.
  • 1 tablespoon rice vinegar Adds needed acidity; apple cider vinegar is a viable substitute.
Cod Fillets
  • 4 pieces cod fillets Look for wild-caught cod for the best flavor and sustainability.

Garnish
  • to taste green onions, chopped Adds freshness and a pop of color.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, and rice vinegar until well combined.
  3. Place the cod fillets on the lined baking sheet, ensuring there’s space around each piece. Season generously with salt and pepper.
Cooking
  1. Brush the soy-ginger mixture generously over each cod fillet.
  2. Bake for 12-15 minutes, or until the cod turns opaque and flakes easily with a fork.
  3. While the cod bakes, chop green onions and toast sesame seeds in a small pan for about 2-3 minutes.
  4. Once the cod is baked, garnish with chopped green onions and toasted sesame seeds. Serve hot.
