- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, and rice vinegar until well combined.
- Place the cod fillets on the lined baking sheet, ensuring there’s space around each piece. Season generously with salt and pepper.
Cooking
- Brush the soy-ginger mixture generously over each cod fillet.
- Bake for 12-15 minutes, or until the cod turns opaque and flakes easily with a fork.
- While the cod bakes, chop green onions and toast sesame seeds in a small pan for about 2-3 minutes.
- Once the cod is baked, garnish with chopped green onions and toasted sesame seeds. Serve hot.
