Preparation
- In a bowl or zip-top bag, whisk together the olive oil, minced garlic, grated Parmesan cheese, lemon juice, Italian seasoning, salt, and pepper.
- Add the chicken to the marinade and coat it evenly. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, up to 4 hours.
- When you're ready to cook, preheat your grill to medium-high heat. Lightly oil the grates with a paper towel dipped in oil to prevent sticking.
Grilling
- Remove chicken from marinade, shaking off excess. Place it on the preheated grill and cook for 5–7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is beautifully charred.
- Let the chicken rest for a few minutes before slicing. This keeps it juicy.
Serving
- Garnish with fresh parsley and extra Parmesan if desired. Serve warm and enjoy with your sides of choice!
Notes
You can marinate the chicken for longer for a stronger flavor. Store leftovers in an airtight container in the fridge for up to 3 days. This recipe is also great for broiling or using a grill pan.
