  • 4 pieces Boneless, skinless chicken breasts or thighs Choose high-quality chicken for the best flavor.
  • 1/4 cup olive oil Extra virgin olive oil adds richness; other oils may alter flavor.
  • 4 cloves garlic, minced Fresh garlic brings a pungent aroma; garlic powder can be used but the flavor will be less intense.
  • 1/3 cup grated Parmesan cheese Freshly grated is best, but pre-grated works in a pinch.
  • 2 tablespoons lemon juice Freshly squeezed adds brightness.
  • 1 teaspoon Italian seasoning Personalize with dried herbs like oregano or basil.
  • Optional: Chopped fresh parsley and extra Parmesan for garnish

Method
 

Preparation
  1. In a bowl or zip-top bag, whisk together the olive oil, minced garlic, grated Parmesan cheese, lemon juice, Italian seasoning, salt, and pepper.
  2. Add the chicken to the marinade and coat it evenly. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, up to 4 hours.
  3. When you're ready to cook, preheat your grill to medium-high heat. Lightly oil the grates with a paper towel dipped in oil to prevent sticking.
Grilling
  1. Remove chicken from marinade, shaking off excess. Place it on the preheated grill and cook for 5–7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is beautifully charred.
  2. Let the chicken rest for a few minutes before slicing. This keeps it juicy.
Serving
  1. Garnish with fresh parsley and extra Parmesan if desired. Serve warm and enjoy with your sides of choice!

Notes

You can marinate the chicken for longer for a stronger flavor. Store leftovers in an airtight container in the fridge for up to 3 days. This recipe is also great for broiling or using a grill pan.
