Ingredients
  

Noodles and Base Ingredients
  • 600 g cooked egg noodles Use quality noodles; fresh if possible for best texture.
  • 8 cloves garlic, minced or pounded Fresh garlic will yield the best flavor.
  • 3 Tbsp unsalted butter Room temperature for easy melting.
  • 1 Tbsp olive oil For a hint of fruity flavor.
  • 1 Tbsp oyster sauce Enhances umami.
  • 1 Tbsp Golden Mountain Sauce or soy sauce Golden Mountain offers a unique flavor; soy sauce is a great substitute.
  • 1 Tbsp fish sauce For depth—just a little goes a long way!
Garnishes and Optional Ingredients
  • 35 g finely grated parmesan cheese Freshly grated is best for melting.
  • to taste freshly ground black or white pepper Adds a hint of spice.
  • 1 lemon, optional For brightness.
  • 1 green onion, chopped Great for a fresh garnish.

Method
 

Preparation
  1. If using pre-cooked egg noodles, gently pull them apart, rinse under cold water, and drain them on a paper towel.
  2. If using uncooked noodles, cook according to package instructions until al dente, drain, and set aside.
Garlic Preparation
  1. Pound 8 cloves of garlic into a rough paste. (Using a mortar and pestle adds to the flavor!)
Sauce Combination
  1. In a bowl, combine 1 tbsp oyster sauce, 1 tbsp fish sauce, and 1 tbsp Golden Mountain sauce. Stir well.
Cooking
  1. Heat 1 tbsp olive oil and 3 tbsp unsalted butter in a wok or large frying pan over low heat.
  2. Add the pounded garlic and cook, stirring frequently, until fragrant—about 30 seconds.
Noodle Mixing
  1. Increase the heat to high. Add the cooked noodles and the sauce mixture you prepared earlier.
  2. Toss quickly, ensuring every noodle is coated, for about 3-4 minutes, until hot.
Finishing Touch
  1. Stir in 35 g of Parmesan cheese and the optional juice of 1 lemon if using. Toss until everything is melted and combined.
Serving
  1. Plate the noodles, garnish with freshly ground black pepper and chopped green onions. Serve with a lemon wedge for an extra zing!

Notes

If you find the noodles sticking together, drizzle a tiny bit of olive oil while tossing them! Always opt for fresh garlic; it makes all the difference.
