Preparation
- If using pre-cooked egg noodles, gently pull them apart, rinse under cold water, and drain them on a paper towel.
- If using uncooked noodles, cook according to package instructions until al dente, drain, and set aside.
Garlic Preparation
- Pound 8 cloves of garlic into a rough paste. (Using a mortar and pestle adds to the flavor!)
Sauce Combination
- In a bowl, combine 1 tbsp oyster sauce, 1 tbsp fish sauce, and 1 tbsp Golden Mountain sauce. Stir well.
Cooking
- Heat 1 tbsp olive oil and 3 tbsp unsalted butter in a wok or large frying pan over low heat.
- Add the pounded garlic and cook, stirring frequently, until fragrant—about 30 seconds.
Noodle Mixing
- Increase the heat to high. Add the cooked noodles and the sauce mixture you prepared earlier.
- Toss quickly, ensuring every noodle is coated, for about 3-4 minutes, until hot.
Finishing Touch
- Stir in 35 g of Parmesan cheese and the optional juice of 1 lemon if using. Toss until everything is melted and combined.
Serving
- Plate the noodles, garnish with freshly ground black pepper and chopped green onions. Serve with a lemon wedge for an extra zing!
Notes
If you find the noodles sticking together, drizzle a tiny bit of olive oil while tossing them! Always opt for fresh garlic; it makes all the difference.
