Ingredients
  

Spices
  • 1 Tbsp Ground Cinnamon Use high-quality Ceylon or Saigon cinnamon for best flavor.
  • 2 tsp Coriander Seeds Toast whole seeds for a more potent flavor.
  • 1 Piece Star Anise Look for whole dried pieces for sweet, licorice-like flavor.
  • 20 Pieces Whole Cloves Fresher cloves yield a more pronounced flavor.
  • 1 tsp Sichuan Peppercorns Optional; adds numbing heat.
  • 1 tsp Fennel Seeds Optional; adds a sweet anise undertone.

Method
 

Preparation
  1. In a dry skillet over medium-high heat, toast the coriander seeds, cloves, star anise, Sichuan peppercorns, and fennel seeds for 2-3 minutes.
  2. Remove from heat and pour the spices onto a plate to cool for a couple of minutes.
  3. Once cooled, add the spices to a coffee grinder along with the ground cinnamon and grind until the mixture is a fine powder.
  4. Store the freshly ground Five Spice Powder in an airtight container, labeled and kept in a cool, dry place.

Notes

For maximum freshness, make your Five Spice Powder in smaller batches. It lasts about six months if stored properly. You can adjust the spice ratios to suit your taste preferences.
