For the Muffins

  • 1 teaspoon ground cinnamon The warm spice complements the eggnog beautifully.
  • 1/2 teaspoon kosher salt Enhances all the flavors.
  • 1/4 teaspoon ground nutmeg A must for that signature eggnog flavor.
  • 1 cup eggnog, room temperature Feel free to use homemade or store-bought.
  • 2 large eggs, room temperature Room temp eggs work into the batter more evenly.
  • 1/4 cup unsalted butter, melted, cooled slightly For richness.
  • 1 teaspoon vanilla extract Adds depth to the flavor.
For the Streusel Topping
  • 1 cup all-purpose flour Use the same as above for consistency.
  • 1/2 cup light brown sugar, packed Dark brown sugar can be substituted for a richer flavor.
  • 1 teaspoon ground cinnamon Match with the muffin base for theme consistency.
  • 1/2 teaspoon kosher salt Helps balance the sweetness.
  • 1/2 cup unsalted butter, melted Integrates well into the streusel.
For the Glaze
  • 1 cup confectioners’ sugar Light and fluffy for a lovely finishing touch.
  • 2-3 tablespoons eggnog Adjust to your desired consistency for the glaze.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Line a standard muffin tin with paper liners and set aside.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, salt, and nutmeg.
  3. In another bowl, whisk together eggnog, eggs, melted butter, and vanilla extract. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Evenly distribute the batter into each lined muffin tin cup, filling about 3/4 full.
Prepare the Streusel Topping
  1. In a medium bowl, whisk together flour, brown sugar, cinnamon, and salt.
  2. Add melted butter to the flour mixture and mix with a fork until it resembles coarse crumbs.
  3. Spoon about a tablespoon of the streusel topping onto each muffin.
Baking
  1. Bake muffins for 22-24 minutes, or until a toothpick inserted in the center comes out mostly clean.
  2. Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
Prepare and Glaze
  1. In a small bowl, whisk together confectioners’ sugar and 2 tablespoons eggnog until smooth and drizzling consistency is achieved.
  2. Drizzle the glaze over the completely cooled muffins.

Notes

Best to have your eggnog and eggs at room temperature to create a smoother batter. These muffins can be stored in an airtight container for up to 3 days at room temperature.
