Preparation
- Preheat your oven to 350 degrees F (175 degrees C). Line a standard muffin tin with paper liners and set aside.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, salt, and nutmeg.
- In another bowl, whisk together eggnog, eggs, melted butter, and vanilla extract. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
- Evenly distribute the batter into each lined muffin tin cup, filling about 3/4 full.
Prepare the Streusel Topping
- In a medium bowl, whisk together flour, brown sugar, cinnamon, and salt.
- Add melted butter to the flour mixture and mix with a fork until it resembles coarse crumbs.
- Spoon about a tablespoon of the streusel topping onto each muffin.
Baking
- Bake muffins for 22-24 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
Prepare and Glaze
- In a small bowl, whisk together confectioners’ sugar and 2 tablespoons eggnog until smooth and drizzling consistency is achieved.
- Drizzle the glaze over the completely cooled muffins.
Notes
Best to have your eggnog and eggs at room temperature to create a smoother batter. These muffins can be stored in an airtight container for up to 3 days at room temperature.
