Ingredients

Main Ingredients
  • 2 cups mushrooms, chopped For the best flavor, choose fresh, organic mushrooms like cremini or shiitake.
  • 1/4 cup onion, finely chopped Yellow onions work beautifully here.
  • 2 tablespoons olive oil A high-quality extra virgin olive oil will lend a fruity richness.
  • 2 tablespoons all-purpose flour For gluten-free needs, consider a gluten-free flour blend.
  • 2 cups vegetable broth Choose low-sodium or homemade for better control over saltiness.
  • 1 tablespoon soy sauce Substitute with tamari for a gluten-free option.
  • 1 teaspoon garlic powder Provides a subtle backdrop of flavor without fresh garlic.
  • to taste salt and pepper Salt and pepper to taste Always use fresh ground pepper for best flavor.

Method

Preparation
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the finely chopped onions and cook until translucent and fragrant, about 3-4 minutes.
  3. Toss in the chopped mushrooms and cook for about 5-7 minutes until they release moisture and turn golden brown.
  4. Sprinkle the flour over the mushrooms and stir well to combine, cooking for an additional 1-2 minutes.
  5. Slowly pour in the vegetable broth, stirring constantly to avoid lumps. Simmer the mixture gently.
  6. Stir in the soy sauce, garlic powder, salt, and pepper, and simmer until thickened, about 3-5 minutes.
  7. Serve generously over your favorite dishes like mashed potatoes or vegan meatloaf.

Notes

For a richer flavor, consider adding a dash of balsamic vinegar. Adjust seasoning to taste. If too thick, whisk in more broth.
