Ingredients
  

For the noodles
  • 6 cups water Fresh water is key for boiling the noodles to perfection.
  • 2 packages ramen noodles Discard the flavor packets.
For the sauce
  • 1/2 cup soy sauce Opt for low sodium soy sauce for a healthier twist.
  • 1/4 cup brown sugar Can substitute with coconut sugar.
  • 1 tablespoon sesame oil Use high-quality sesame oil for the best flavor.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 teaspoon ginger, grated Fresh ginger for zest.
For the toppings
  • 2 green onions chopped For garnish.
  • 1 cup mixed vegetables Use bell peppers, peas, or broccoli.

Method
 

Preparation
  1. In a large pot, bring 6 cups of water to a rolling boil.
  2. Once boiling, add 2 packages of ramen noodles and cook according to package instructions, usually about 3-4 minutes.
  3. While noodles are cooking, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger in a small bowl, and mix well until the sugar is dissolved.
  4. When noodles are almost done, add 1 cup of mixed vegetables to the pot and stir, cooking for an additional 2 minutes.
Combining
  1. Pour the sauce mixture over the noodles and vegetables, stirring to coat evenly.
  2. Cook for an additional 2-3 minutes to allow the sauce to thicken slightly.
  3. Remove from heat and stir in chopped green onions.
Serving
  1. Ladle the saucy ramen noodles into bowls and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of water to refresh the noodles. Customize with proteins like chicken or tofu, and add spice with red pepper flakes or sriracha.
