Preparation
- In a large pot, bring 6 cups of water to a rolling boil.
- Once boiling, add 2 packages of ramen noodles and cook according to package instructions, usually about 3-4 minutes.
- While noodles are cooking, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger in a small bowl, and mix well until the sugar is dissolved.
- When noodles are almost done, add 1 cup of mixed vegetables to the pot and stir, cooking for an additional 2 minutes.
Combining
- Pour the sauce mixture over the noodles and vegetables, stirring to coat evenly.
- Cook for an additional 2-3 minutes to allow the sauce to thicken slightly.
- Remove from heat and stir in chopped green onions.
Serving
- Ladle the saucy ramen noodles into bowls and enjoy!
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of water to refresh the noodles. Customize with proteins like chicken or tofu, and add spice with red pepper flakes or sriracha.
