  • 1 cup sour cream
  • 2 tablespoons flour

Preparation
  1. In a large skillet, heat olive oil over medium heat until shimmering.
  2. Add sliced beef; cook until browned on all sides, about 3-4 minutes.
  3. Remove the beef from the skillet and set aside on a plate, allowing it to rest.
  4. In the same skillet, add chopped onion and sliced mushrooms. Cook until softened, about 5 minutes.
Cooking
  1. Sprinkle flour over the vegetables and stir to coat thoroughly.
  2. Gradually pour in the beef broth, stirring constantly until the mixture thickens.
  3. Reduce heat and stir in sour cream until well combined. Allow to warm through but not boil.
  4. Return the beef to the skillet, allowing it to reheat gently.
  5. Season with salt and pepper to taste.
Serving
  1. Serve over egg noodles or creamy mashed potatoes, garnished with fresh parsley if desired.

Notes

Consider adding spinach or steamed broccoli for additional nutrients. You can substitute beef for seitan or mushrooms for a vegan option.
