Dressing

Method
 

Preparation
  1. Using a food processor or mandoline, thinly shred the red cabbage, followed by the apple and cucumber.
  2. Transfer the sliced veggies into a large mixing bowl.
  3. In a small bowl, whisk together the tahini, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth and creamy.
  4. Add the crumbled feta and chopped walnuts to the bowl with cabbage, apple, and cucumber, then pour over the dressing.
  5. Toss gently to ensure every piece is coated.
  6. Serve immediately or let the salad sit for about 10-15 minutes to allow the flavors to meld.
