  • 1 pound Italian sausage Ground or casing removed; choose a brand with minimal fillers for the best flavor.
  • 1 14-ounce can diced tomatoes Fire-roasted or seasoned canned tomatoes can elevate the flavor.
  • 1 cup chicken broth Homemade is best; low-sodium store-bought works well too.
Creamy Ingredients
  • 1 8-ounce package cream cheese Make sure it’s at room temperature for easy mixing.
  • 1 teaspoon garlic powder Fresh minced garlic can be used for extra depth.
  • 1 teaspoon onion powder Adds a lovely savoriness to the dish.
  • 1 teaspoon Italian seasoning A blend of herbs that will wake up all the flavors!
Main Ingredients
  • 1 package frozen cheese tortellini No need to cook beforehand!
  • 2 cups fresh spinach Baby spinach is preferred for a milder flavor.
  • 1/2 cup grated Parmesan cheese Freshly grated will give you the best results.

Method
 

Preparation
  1. In a skillet over medium heat, cook the Italian sausage until nicely browned and cooked through (about 5-7 minutes). Drain any excess fat.
  2. In your crockpot, add the diced tomatoes (with juices), cream cheese, chicken broth, garlic powder, onion powder, and Italian seasoning. Stir until the cream cheese melts and the mixture is smooth.
  3. Add the cooked Italian sausage to the crockpot and stir to mix it thoroughly.
  4. Gently stir in the frozen cheese tortellini, being careful not to break them.
Cooking
  1. Cover and cook on low for 4 hours.
  2. About 15 minutes before serving, incorporate the fresh spinach and grated Parmesan cheese. Stir until the spinach wilts and the cheese melts into the sauce.
Serving
  1. Serve hot, garnished with extra Parmesan and a sprinkle of fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can make this meal in advance or adapt it to suit your dietary preferences.
