Preparation
- Season the chicken breasts with salt, pepper, and Italian seasoning on all sides.
- In a skillet over medium heat, add olive oil and unsalted butter. Once hot, sear the chicken breasts for about 3–4 minutes per side until golden brown.
- Transfer the seared chicken to your crockpot.
- In the same skillet, sauté minced garlic for about 1 minute until fragrant.
- Deglaze the pan with chicken broth, scraping up browned bits and simmer for 2 minutes.
- Reduce heat to low, add heavy cream and grated Parmesan cheese, and whisk until smooth and creamy.
- Pour the creamy mixture over the chicken in the crockpot, adding lemon slices and cherry tomatoes if desired.
- Cover the crockpot and cook on LOW for 4–5 hours, or until the chicken is tender.
- Stir the sauce well before serving and garnish with fresh parsley.
