Ingredients

Main Ingredients
  • 6 pieces boneless, skinless chicken thighs Opt for organic if possible; they have more flavor.
  • 1 can unsalted cream of chicken soup (10.5 oz) Look for natural brands with lower sodium options.
  • 2 envelopes chicken gravy mix (0.87 oz each) McCormick brand recommended; consider gluten-free if needed.
  • 1/2 cup chicken broth Homemade broth is best, but store-bought works too.

Method

Preparation
  1. Get the chicken thighs to room temperature before placing them in the crockpot.
  2. Grease the crockpot with a good-quality butter or oil for easy cleanup.
Cooking
  1. Place the chicken thighs at the bottom of your crockpot in a single layer.
  2. In a medium bowl, whisk together the cream of chicken soup, chicken gravy mix, and chicken broth until smooth.
  3. Pour the mixture over the chicken thighs, ensuring they are all covered.
  4. Cover the crockpot and set it on low heat for 4-5 hours.
  5. Check for tenderness; the chicken should easily shred apart.
  6. Serve shredded or whole, spooning the gravy over the top.

Notes

Feel free to add diced potatoes and carrots halfway through cooking for a complete meal. Store leftovers in an airtight container in the fridge for up to four days or freeze for two to three months.
