  • 1 packet Onion soup mix This adds a savory flavor boost. Use low-sodium mix if preferred.
  • 1 can (10.5 oz) Cream of mushroom soup A must-have for creaminess; consider homemade for a cleaner ingredient list.
  • 1 cup Sour cream Full-fat works best for velvety texture; Greek yogurt is a low-fat substitute.
  • 1 cup Beef broth Use high-quality options; homemade or store-bought.
  • 3 cups Egg noodles, cooked Wide or regular, cooked al dente, complementing the sauce perfectly.

Preparation
  1. Wash and slice the mushrooms and dice your onion. This step takes about 10 minutes.
Cooking
  1. In a large crockpot, add the beef stew meat, diced onion, sliced mushrooms, onion soup mix, cream of mushroom soup, and beef broth.
  2. Stir ingredients gently to combine without breaking the beef apart.
  3. Set your crockpot to LOW and cook for 6-8 hours, or on HIGH for 4-5 hours.
  4. About 20 minutes before serving, stir in the sour cream.
  5. For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the crockpot in the last 30 minutes.
  6. Cook the egg noodles according to package instructions, drain, and set aside.
  7. To serve, ladle the beef stroganoff over the egg noodles and finish with a sprinkle of fresh herbs like parsley.

Notes

This dish remains delicious for up to 3 days in the fridge. Store it in an airtight container and it can also be frozen for up to 3 months. Prep everything the night before for an easy dinner in the morning.
