Preparation
- Wash and slice the mushrooms and dice your onion. This step takes about 10 minutes.
Cooking
- In a large crockpot, add the beef stew meat, diced onion, sliced mushrooms, onion soup mix, cream of mushroom soup, and beef broth.
- Stir ingredients gently to combine without breaking the beef apart.
- Set your crockpot to LOW and cook for 6-8 hours, or on HIGH for 4-5 hours.
- About 20 minutes before serving, stir in the sour cream.
- For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the crockpot in the last 30 minutes.
- Cook the egg noodles according to package instructions, drain, and set aside.
- To serve, ladle the beef stroganoff over the egg noodles and finish with a sprinkle of fresh herbs like parsley.
Notes
This dish remains delicious for up to 3 days in the fridge. Store it in an airtight container and it can also be frozen for up to 3 months. Prep everything the night before for an easy dinner in the morning.
