  • 2 cups sliced mushrooms Cremini or button mushrooms are great choices; they soak up all the delicious juices beautifully.
  • 1 teaspoon garlic powder Fresh garlic can substitute if you prefer a bolder flavor; about 2-3 cloves should do.
  • 1 teaspoon dried oregano Adds a pleasant earthiness; you can also add thyme or rosemary for variation.

Preparation
  1. Start by placing the chicken breasts in a single layer at the bottom of your crockpot.
  2. In a medium bowl, whisk together the balsamic vinegar, chicken broth, garlic powder, dried oregano, and a pinch of salt and pepper.
  3. Gently pour this flavorful mixture evenly over the chicken.
  4. Scatter the sliced mushrooms over the top.
Cooking
  1. Cover the crockpot and set it to LOW for 6-7 hours or HIGH for 3-4 hours.
  2. Ensure the chicken reaches an internal temperature of 165°F (74°C) at the thickest part.
  3. For a thicker sauce, remove 1/4 cup of liquid from the crockpot and whisk in 1 teaspoon of cornstarch. Stir this mixture back into the crockpot and cook uncovered on HIGH for 10-15 minutes.
Serving
  1. Serve warm with mashed potatoes, rice, or crusty bread to soak up all the delicious sauce.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. This dish also reheats well. Consider trying variations like adding different vegetables or herbs to suit your taste.
