- Start by placing the chicken breasts in a single layer at the bottom of your crockpot.
- In a medium bowl, whisk together the balsamic vinegar, chicken broth, garlic powder, dried oregano, and a pinch of salt and pepper.

- Scatter the sliced mushrooms over the top.
Cooking
- Cover the crockpot and set it to LOW for 6-7 hours or HIGH for 3-4 hours.
- Ensure the chicken reaches an internal temperature of 165°F (74°C) at the thickest part.
- For a thicker sauce, remove 1/4 cup of liquid from the crockpot and whisk in 1 teaspoon of cornstarch. Stir this mixture back into the crockpot and cook uncovered on HIGH for 10-15 minutes.
Serving
- Serve warm with mashed potatoes, rice, or crusty bread to soak up all the delicious sauce.
