  • ½ pound bacon Thick-cut bacon recommended for more flavor.
  • ½ medium onion, diced Yellow or white onions work beautifully.
  • 2 bunches asparagus, woody ends discarded and cut into 1½-inch pieces Look for vibrant stalks that snap easily.
  • cup packed light brown sugar This adds needed sweetness; substitute with maple syrup if desired.
  • 3 tablespoons salted butter Room temperature; Kerrygold is a great choice for its rich flavor.
  • 2 tablespoons Worcestershire sauce Adds depth of umami.
  • ½ teaspoon garlic powder For an aromatic touch.

Method
 

Cook the Bacon
  1. In a large skillet over medium heat, add your diced bacon and cook until it reaches a deep brown and crispy texture, about 5-7 minutes. Remove the bacon and place it on a paper towel-lined plate to absorb excess grease.
  2. Use a splatter guard to avoid grease splatters.
Sauté the Onion and Asparagus
  1. Carefully pour out all but 1 tablespoon of bacon grease from the skillet. Add the diced onion and asparagus to the hot pan. Cook for 1 minute until the onions are slightly translucent, and the asparagus begins to brighten in color.
  2. Look for the asparagus to turn a vibrant green without overcooking.
Add Water and Steam
  1. Add ½ cup of water to the pan, cover it, and let it steam for about 2-3 minutes until the asparagus becomes tender-crisp.
Flavor Time
  1. Once the water has evaporated, lower the heat and add in the brown sugar, butter, Worcestershire sauce, garlic powder, and black pepper to taste. Stir and cook for another 1-2 minutes until beautifully coated.
  2. Watch the mixture carefully to prevent burning the sugars.
Combine the Bacon
  1. Chop the crisp bacon into bite-sized pieces and add it back into the skillet, stirring well to combine.
Serve and Enjoy
  1. Transfer your beautifully glazed asparagus with bacon to a serving dish.

Notes

Let your butter sit at room temperature before using for smooth mixing. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
