Ingredients

Main Ingredients
  • 1 tablespoon olive oil Extra virgin olive oil is recommended.
  • 12 ounces chicken sausage, sliced Choose your favorite brand, Applegate recommended.
  • 1 small onion, diced Sweet or yellow onion works perfectly.
  • 2 cloves garlic, minced Fresh garlic is key to a robust aroma.
  • 1 cup orzo Make sure it’s uncooked.
  • 2 cups chicken broth Homemade is ideal, low-sodium store-bought works well too.
  • 1 cup milk Whole milk yields the creamiest results; non-dairy options can be used.
  • 2 cups broccoli florets Fresh broccoli preferred.
  • 1/2 cup grated Parmesan cheese Freshly grated will give the most flavor.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper For a hint of spice.

Method

Cooking Process
  1. In a large pot over medium heat, pour in the tablespoon of olive oil. Allow it to shimmer, becoming hot and fragrant—this usually takes about 1-2 minutes.
  2. Add the sliced chicken sausage to the pot. Sauté for about 5-7 minutes, stirring occasionally until browned.
  3. Stir in the diced onion and minced garlic. Cook for an additional 2 minutes until fragrant.
  4. Pour in the uncooked orzo, chicken broth, and milk. Bring the mixture to a gentle simmer, stirring continuously to prevent sticking.
  5. Cover the pot and let it cook for 8-10 minutes until the orzo absorbs most of the liquid.
  6. Uncover the pot and mix in the broccoli florets and grated Parmesan cheese. Cook for an additional 3-4 minutes until the broccoli is bright green and tender.
  7. Season the dish with salt and black pepper to taste. Mix everything thoroughly and serve immediately.
