  • ½ cup heavy cream For a richer sauce, use heavy cream.
  • ½ cup grated Parmesan cheese Freshly grated is optimal.
  • 6 cups fresh spinach Alternatively, use 3 cups thawed frozen spinach.

Preparation
  1. Start by seasoning your chicken generously with salt, pepper, and Italian seasoning.
  2. In a large skillet, heat the olive oil and butter over medium heat until bubbly.
  3. Carefully add the chicken to the skillet. Sear for about 4-5 minutes on each side, or until golden brown and cooked through.
  4. In the same skillet, toss in the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth, scraping up the browned bits from the bottom. Let it simmer for about 2 minutes.
  6. Stir in the heavy cream and grated Parmesan until smooth and creamy.
  7. Add the fresh spinach, stirring until it wilts down.
  8. Return the seared chicken to the skillet and spoon sauce over the top. Let it simmer together for an additional 5 minutes.
  9. Dish up hot, alongside your favorite side.

Notes

For an added flair, garnish with fresh parsley or a drizzle of olive oil before serving. Store leftovers in an airtight container for up to 3 days.
