- Start by seasoning your chicken generously with salt, pepper, and Italian seasoning.
- In a large skillet, heat the olive oil and butter over medium heat until bubbly.
- Carefully add the chicken to the skillet. Sear for about 4-5 minutes on each side, or until golden brown and cooked through.
- In the same skillet, toss in the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth, scraping up the browned bits from the bottom. Let it simmer for about 2 minutes.
- Stir in the heavy cream and grated Parmesan until smooth and creamy.
- Add the fresh spinach, stirring until it wilts down.
- Return the seared chicken to the skillet and spoon sauce over the top. Let it simmer together for an additional 5 minutes.
- Dish up hot, alongside your favorite side.
