Preparation
- In a stand mixer fitted with the whisk attachment, pour in the heavy whipping cream. Beat on medium-high speed until the cream thickens, about 3-4 minutes.
- Gradually add the confectioners’ sugar and continue whipping until soft peaks form, about another 1-2 minutes.
- Use a trifle bowl or large glass dish. Place 1/3 of the angel food cake cubes at the bottom, followed by 1/3 of the whipped cream. Spread 1/2 of the orange curd over the whipped cream.
- Repeat the sequence with another 1/3 of cake, 1/3 of whipped cream, and finish with the remaining orange curd. End with a generous layer of whipped cream on top.
- Garnish with mint leaves and orange slices.
- Serve immediately or cover and refrigerate for a couple of hours to let the flavors meld.
Notes
Best enjoyed fresh but can store leftovers in the fridge for up to two days. Can prepare the orange curd a day ahead.
