Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the shredded chicken, softened cream cheese, shredded cheese, garlic powder, onion powder, and cumin. Mix until well blended and creamy.
  3. Lay out the small tortillas. If too stiff, warm them in the microwave for 10-15 seconds.
  4. Place a few tablespoons of the chicken mixture onto each tortilla. Roll them tightly.
  5. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  6. Lightly spray the tops with cooking spray or brush with oil. Bake for 15-20 minutes, until golden brown and crispy.
  7. Let them cool slightly and serve with salsa, guacamole, or sour cream.

Notes

For best results, keep an eye on your taquitos while baking for perfect golden color without burning. Uncooked taquitos can be stored in the fridge for up to 2 days. Store cooked ones in a sealed container for up to 3-4 days.
