  • 1 cup all-purpose flour, plus more for dusting Whole wheat or gluten-free flour can be used.
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup cottage cheese, blended Whole milk for extra creaminess is ideal.
  • Olive oil for drizzling Extra virgin olive oil enhances flavor.
For Toppings
  • Desired pizza toppings (marinara sauce, shredded mozzarella, pepperoni, veggies, etc.) Customize to your liking!

Preparation
  1. In a large bowl, combine 1 cup all-purpose flour, 2 teaspoons baking powder, and 1 teaspoon salt. Stir to mix.
  2. Blend 1 cup cottage cheese in a food processor until smooth.
  3. Pour the blended cottage cheese into the dry mix and stir until a smooth dough forms. Dust with extra flour if too sticky.
  4. Dust a counter with flour; place your dough, sprinkle the top with flour, and roll to your desired thickness.
  5. Transfer the rolled-out dough onto a baking sheet, drizzle with olive oil, and pre-bake in a preheated oven at 450°F (230°C) for about 10 minutes or until slightly golden.
  6. After pre-baking, add desired toppings and return to the oven. Bake for an additional 5 minutes until the cheese is melted.
  7. For a crispy top, broil for an extra 1-2 minutes.

Notes

Ensure cottage cheese is at room temperature for best blending results! Store dough wrapped tightly in plastic wrap in the fridge for up to 2 days, or freeze for up to a month. To reheat leftovers, warm in the oven at 350°F (175°C) for about 10-15 minutes.
