  • 1 cup all-purpose flour, plus more for dusting For a light and fluffy texture. Use unbleached flour for the best flavor.
  • 2 teaspoons baking powder This will give your pitas that delightful fluffiness.
  • 1 teaspoon salt To enhance the taste of your pita bread.
Wet Ingredients
  • 1 cup cottage cheese, blended Use a good-quality full-fat cottage cheese for creaminess. If you prefer lower fat, that’s fine too!

Preparation
  1. In a bowl, add 1 cup of all-purpose flour, 2 teaspoons of baking powder, and 1 teaspoon of salt. Mix well until evenly combined.
  2. Transfer your 1 cup of cottage cheese into a food processor and blend until smooth.
  3. Add the blended cottage cheese into the bowl with the dry ingredients. Mix gently until a smooth dough forms.
  4. Cut the dough into 4 equal pieces, rolling each into a ball.
  5. On a floured surface, use a rolling pin to flatten each ball into a circle about 1/4 inch thick.
  6. Preheat a non-stick skillet or frying pan on medium-high heat. Cook each pita for about 2-3 minutes on one side, until bubbles form, then flip and cook for an additional 1-2 minutes until golden and slightly puffed.
  7. Serve warm, and enjoy your homemade pita bread!

Notes

Store in an airtight container at room temperature for up to 2 days, refrigerate for up to 7 days, or freeze for up to 3 months.
