- In a bowl, add 1 cup of all-purpose flour, 2 teaspoons of baking powder, and 1 teaspoon of salt. Mix well until evenly combined.
- Transfer your 1 cup of cottage cheese into a food processor and blend until smooth.
- Add the blended cottage cheese into the bowl with the dry ingredients. Mix gently until a smooth dough forms.
- Cut the dough into 4 equal pieces, rolling each into a ball.
- On a floured surface, use a rolling pin to flatten each ball into a circle about 1/4 inch thick.
- Preheat a non-stick skillet or frying pan on medium-high heat. Cook each pita for about 2-3 minutes on one side, until bubbles form, then flip and cook for an additional 1-2 minutes until golden and slightly puffed.
- Serve warm, and enjoy your homemade pita bread!
