Wet Ingredients
  • 3/4 cup cottage cheese Make sure it is well-drained for best results.

  • 2 large eggs Preferably at room temperature.
  • 1 teaspoon vanilla extract For that sweet aroma.
  • 2 tablespoons milk Adjust for desired consistency.
  • 1 tablespoon melted butter or oil Using unsalted butter is preferred.

Preparation
  1. Preheat your skillet over medium heat and lightly grease with butter or oil.
  2. In a medium bowl, whisk together the flour, sugar (if using), baking powder, baking soda, and salt.
  3. In another bowl, mix the cottage cheese, Greek yogurt, eggs, vanilla extract, and melted butter until smooth.
  4. Gently combine the wet mixture into the dry ingredients. Be cautious not to overmix; if the batter is too thick, add a splash more milk.
Cooking
  1. Scoop about 1 tablespoon of batter onto the hot skillet for each pancake bite. Flatten them slightly.
  2. Cook for 2-3 minutes or until bubbles appear on the surface.
  3. Flip the bites and cook for another 2-3 minutes until they are golden and cooked through.
  4. Serve warm, drizzled with maple syrup, topped with fresh berries, or with a dollop of whipped cream.

Notes

Avoid crowding the skillet and don’t overmix the batter for best texture. These bites are great for meal prep, refrigerating, and freezing.
