Preparation
- Preheat your skillet over medium heat and lightly grease with butter or oil.

- In another bowl, mix the cottage cheese, Greek yogurt, eggs, vanilla extract, and melted butter until smooth.
- Gently combine the wet mixture into the dry ingredients. Be cautious not to overmix; if the batter is too thick, add a splash more milk.
Cooking
- Scoop about 1 tablespoon of batter onto the hot skillet for each pancake bite. Flatten them slightly.
- Cook for 2-3 minutes or until bubbles appear on the surface.
- Flip the bites and cook for another 2-3 minutes until they are golden and cooked through.
- Serve warm, drizzled with maple syrup, topped with fresh berries, or with a dollop of whipped cream.
Notes
Avoid crowding the skillet and don’t overmix the batter for best texture. These bites are great for meal prep, refrigerating, and freezing.
