  • 1 cup all-purpose flour (plus more for dusting) King Arthur Flour is recommended for quality.
  • 2 teaspoons baking powder
  • 1 teaspoon salt Himalayan pink salt recommended for extra flavor.
  • 1 cup cottage cheese Low-fat option like Daisy Cottage Cheese is preferred, blend until smooth.
  • 1/2 egg beaten (for brushing) Flax egg can be used for a vegan option.

  • everything bagel seasoning Recommended brand: Trader Joe’s Everything But Bagel Seasoning.

Method
 

Preparation
  1. In a large bowl, combine 1 cup of flour, 2 teaspoons of baking powder, and 1 teaspoon of salt. Whisk together until fully combined.
  2. In a food processor, add 1 cup of cottage cheese and blend until smooth and creamy.
  3. Gently fold the blended cottage cheese into the flour mixture. Mix until a cohesive dough forms. If it feels too sticky, add a sprinkle of flour as you go.
  4. On a lightly floured surface, divide the dough into four equal pieces. Roll each piece into a ball and poke a hole in the center to create a classic bagel shape.
  5. Brush the tops and sides of the bagels with the beaten egg and sprinkle with sesame seeds or everything bagel seasoning if desired.
  6. Preheat your air fryer to 300°F. Place the bagels in the basket, making sure not to overcrowd. Cook for about 13 minutes, or until they are golden and puffed up.
  7. Once finished, let them cool for a couple of minutes before serving.

Notes

For maximum flavor, let bagels cool completely before adding toppings. Avoid overmixing the dough to prevent dense bagels.
