Preparation
- Preheat your oven to 350°F (175°C) and grease your loaf pan generously with vegetable oil or butter.
Mixing
- In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In another bowl, thoroughly beat together the wet ingredients: eggs, pumpkin puree, vegetable oil, granulated sugar, brown sugar, and vanilla extract until smooth.
- Gradually fold the wet ingredients into the dry mixture until just combined; lumps are okay.
Baking
- Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
