Preparation
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan generously with vegetable oil or butter.
Mixing

  2. In another bowl, thoroughly beat together the wet ingredients: eggs, pumpkin puree, vegetable oil, granulated sugar, brown sugar, and vanilla extract until smooth.
  3. Gradually fold the wet ingredients into the dry mixture until just combined; lumps are okay.
Baking
  1. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
