  • 2 tablespoons olive oil Extra virgin is key for robust flavor.
  • to taste salt and black pepper Season to your preference.
  • 1 tablespoon fresh parsley, chopped For garnishing; adds a lovely pop of color.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. If using jarred roasted peppers, drain and rinse them. For homemade, roast them under the broiler until charred, then peel off the skin.
  3. In a blender, combine roasted peppers, minced garlic, and a tablespoon of olive oil. Blend until smooth, and season with salt and pepper to taste.
Baking
  1. Rinse cod fillets under cold water and pat them dry. Place them in a greased baking dish.
  2. Pour the roasted red pepper sauce over the fillets, ensuring they are generously covered.
  3. Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. Keep an eye on it to prevent burning.
  4. For a golden top, broil for the last 2-3 minutes.
Serving
  1. Drizzle with the remaining olive oil and garnish with fresh parsley before serving.
  2. Serve warm, alongside a side of fluffy rice or crusty bread.

Notes

For a smoother blending, ensure ingredients are at room temperature. Fresh parsley offers the brightest flavor, so chop just before serving.
