Preparation
- Preheat your oven to 400°F (200°C).
- If using jarred roasted peppers, drain and rinse them. For homemade, roast them under the broiler until charred, then peel off the skin.
- In a blender, combine roasted peppers, minced garlic, and a tablespoon of olive oil. Blend until smooth, and season with salt and pepper to taste.
Baking
- Rinse cod fillets under cold water and pat them dry. Place them in a greased baking dish.
- Pour the roasted red pepper sauce over the fillets, ensuring they are generously covered.
- Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. Keep an eye on it to prevent burning.
- For a golden top, broil for the last 2-3 minutes.
Serving
- Drizzle with the remaining olive oil and garnish with fresh parsley before serving.
- Serve warm, alongside a side of fluffy rice or crusty bread.
Notes
For a smoother blending, ensure ingredients are at room temperature. Fresh parsley offers the brightest flavor, so chop just before serving.
