Ingredients
  

Cheesecake Filling
  • 2 packages cream cheese, softened I recommend Philadelphia for its creamy texture.
  • 1.5 cups granulated sugar, divided Use organic sugar for a richer flavor.
  • 1 large egg, room temperature, separated Use eggs at room temperature for better incorporation.
  • 1 teaspoon vanilla extract Pure vanilla extract enhances flavor.
Crescent Roll Crust
  • 2 tubes refrigerated crescent rolls Pillsbury works great here.
Cinnamon Sugar Topping
  • 1 teaspoon cinnamon I love using Saigon cinnamon for its intense flavor.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F. Spray a 9x13-inch baking dish with cooking spray to prevent sticking.
  2. In a medium bowl, add the softened cream cheese, 1 cup of granulated sugar, egg yolk, and vanilla extract. Mix on medium speed until smooth and creamy, about 2-3 minutes. Set aside.
  3. Roll out one tube of crescent rolls and press it into the bottom of the prepared baking dish, sealing any seams to create a flat layer.
  4. Spread the cream cheese mixture evenly over the layer of crescent rolls, ensuring it covers the entire surface.
  5. Roll out the second tube of crescent roll dough and lay it over the cream cheese layer.
Baking
  1. In a small bowl, beat the egg white until frothy, then brush it evenly over the top layer of dough.
  2. In another bowl, mix the remaining 1/2 cup of sugar and cinnamon, then sprinkle it generously over the egg wash.
  3. Place the dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown.
Cooling
  1. Let the bars cool at room temperature for 30 minutes. For the best texture, refrigerate them for at least 2 hours before slicing and serving.

Notes

Don’t rush the cooling process; chilling helps the bars set and enhances the flavor. If you have leftover cinnamon-sugar, sprinkle it on top just before serving for an extra touch!
