  • 2 ounces cream cheese, softened Using high-quality cream cheese ensures a rich flavor.
  • 1/2 cup confectioners sugar, sifted Feel free to substitute with powdered erythritol for a low-sugar option.
  • 1/4 cup unsweetened cocoa powder Dutch-process for deeper flavor or natural cocoa can work too.
  • 2 cups heavy whipping cream, divided Choose a cream with at least 36% fat content.
  • 1/2 teaspoon vanilla extract Use pure for the best flavor.
  • 1 pinch kosher salt Enhances chocolate flavor.

Method
 

Mixing the Base
  1. In a bowl of a stand mixer with the whisk attachment, add softened cream cheese, sifted confectioners sugar, and cocoa powder. Start mixing on low speed for about 3-5 minutes until fully combined.
Incorporate Cream
  1. With the mixer off, add 1/2 cup of heavy cream. Mix on medium speed for about 30 seconds or until smooth.
Repeat Process
  1. Add another 1/2 cup of heavy cream and mix again. Repeat this until all cream is incorporated.
Whip to Stiff Peaks
  1. Use a rubber spatula to incorporate any unblended cream cheese. Turn the mixer to medium speed and whip until stiff peaks form.
Finish with Flavor
  1. Add vanilla extract and a pinch of kosher salt, being careful not to overmix.

Notes

Store in an airtight container in the fridge for up to 3 days, or freeze for up to 1 month. Use high-quality ingredients for the best results.
