Preparation
- Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking pan.
- In a bowl, mix together flour, baking soda, and salt. Set aside.
- In another bowl, cream together the softened butter, brown sugar, granulated sugar, and vanilla extract until light and fluffy—about 3-4 minutes.
- Gradually add the dry ingredients to the wet ingredients and mix until just incorporated. Be careful not to overmix. Fold in the chocolate chips.
- Spread half of the cookie dough mixture into the bottom of the greased pan, pressing it firmly to create an even base.
- In a separate bowl, beat together cream cheese, sugar, and vanilla until smooth. Add the egg and mix until fully combined.
- Pour the cream cheese mixture over the cookie layer in the pan, spreading it evenly.
- Drop spoonfuls of the remaining cookie dough over the cream cheese layer.
- Bake for 30-35 minutes or until the edges are golden brown, and the center is set but slightly jiggly.
- Allow to cool before slicing into bars.
Notes
For a brownie-like texture, try chilling the dough for about 30 minutes before baking. Store leftovers in an airtight container for up to 3-4 days at room temperature or a week in the fridge.
