Chocolate Chip Butter Swim Biscuits

These buttery biscuits are filled with gooey chocolate chips and are incredibly easy to whip up, perfect for any occasion.

Ingredients
  

Dry Ingredients
  • 2 1/2 cups all-purpose flour I recommend King Arthur Flour for its consistent results
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon kosher salt
Wet Ingredients
  • 2 cups buttermilk Use full-fat for the best texture, low-fat works too.
  • 1/2 cup unsalted butter, melted Always use unsalted butter to control the salt level in your baked goods.
Chocolate Chips
  • 1 1/4 cups semi-sweet chocolate chips, divided Ghirardelli chocolate chips are recommended for their rich flavor.

Method
 

Preparation
  1. Preheat the oven to 450°F (232°C).
  2. In a medium bowl, whisk together the flour, 1 cup of chocolate chips, baking powder, sugar, and salt until well blended.
  3. Pour in the buttermilk and gently stir until mostly combined, leaving some lumps.
  4. Pour the melted butter into an 8x8-inch baking dish.
  5. Spoon the dough on top of the melted butter, spreading it to the edges.
  6. Lightly score the dough into 9 equal squares to ease serving.
  7. Sprinkle the remaining 1/4 cup of chocolate chips on top and press them in slightly.
Baking
  1. Bake for 28-30 minutes until golden brown and a toothpick inserted in the center comes out clean.
  2. Allow to set for about 5-10 minutes before serving.

Notes

These biscuits are best enjoyed on the same day but can be stored for up to 2 days at room temperature in an airtight container.
