Ingredients
  

Main Ingredients
  • 2 cans chickpeas, drained and rinsed I recommend using organic for best flavor
  • 1 cup breadcrumbs Use gluten-free if desired
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup carrot, grated
  • 1/4 cup soy sauce Can use tamari for gluten-free
  • 1/4 cup maple syrup The real stuff, please! It adds a lovely depth of flavor
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the chickpeas until mostly smooth, leaving some pieces for added texture.
  3. Stir in the breadcrumbs, onion, garlic, carrot, soy sauce, maple syrup, Dijon mustard, smoked paprika, and salt and pepper.
  4. Transfer the mixture to a greased loaf pan and shape it into a loaf, pressing it down firmly.
  5. Bake for about 45-50 minutes, or until the top is golden and firm.
  6. Allow to cool slightly before slicing.
  7. Serve with additional maple syrup glaze if desired.

Notes

For added depth of flavor, sauté your onion and garlic before mixing. Store leftovers in the fridge for up to 4 days, or freeze sections for up to 3 months.
