Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the chickpeas until mostly smooth, leaving some pieces for added texture.
- Stir in the breadcrumbs, onion, garlic, carrot, soy sauce, maple syrup, Dijon mustard, smoked paprika, and salt and pepper.
- Transfer the mixture to a greased loaf pan and shape it into a loaf, pressing it down firmly.
- Bake for about 45-50 minutes, or until the top is golden and firm.
- Allow to cool slightly before slicing.
- Serve with additional maple syrup glaze if desired.
Notes
For added depth of flavor, sauté your onion and garlic before mixing. Store leftovers in the fridge for up to 4 days, or freeze sections for up to 3 months.
