Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil extra virgin for the best flavor
  • 1 teaspoon smoked paprika
  • to taste Salt and black pepper
For the Rice Bowls
  • 2 cups cooked rice choose white, brown, or jasmine based on your preference
  • 1 cup fresh parsley finely chopped
For the Creamy Garlic Sauce
  • 1/2 cup mayonnaise try using a good quality brand like Hellmann’s or Kewpie for optimal creaminess
  • 1 tablespoon lemon juice freshly squeezed for the best flavor
  • 3 cloves garlic minced
  • 1/2 teaspoon crushed red pepper flakes adjust based on your spice tolerance

Method
 

Preparation
  1. Rub both chicken breasts with olive oil, then sprinkle them with smoked paprika, salt, and black pepper.
  2. Preheat your grill or grill pan over medium heat.
Grilling
  1. Place the seasoned chicken on the grill and cook for 6–7 minutes on each side until cooked through.
  2. Let the chicken rest for about five minutes before slicing thinly against the grain.
Making the Sauce
  1. In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, crushed red pepper flakes, and a pinch of salt until smooth and creamy.
Assembling the Bowls
  1. In a large bowl, add the cooked rice as a base.
  2. Top with sliced grilled chicken and drizzle with the creamy garlic sauce.
  3. Garnish with fresh parsley.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can prepare the sauce and grill the chicken a day in advance. Adjust spices as desired.
