  • 1 cup breaded chicken breast, cooked and sliced Homemade or store-bought.
  • 1/2 cup cottage cheese Choose full-fat or low-fat.
  • 1/2 cup marinara sauce Select a jar with no added sugar.
  • 1/4 cup shredded mozzarella cheese Fresh or pre-shredded.
  • 2 tablespoons grated Parmesan cheese Use good quality Parmigiano-Reggiano.
  • to taste fresh basil leaves for garnish Aromatic freshness.

Method
 

Preparation
  1. In a serving bowl, layer the cottage cheese as the base.
  2. Add sliced, cooked breaded chicken breast on top of the cottage cheese.
  3. Spoon marinara sauce evenly over the chicken.
  4. Sprinkle with mozzarella and Parmesan cheese.
  5. Garnish with chopped fresh basil.
  6. Serve immediately, or broil for 2 minutes to melt and bubble the cheese.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for optimal texture. Consider adding red pepper flakes for some heat before serving. You can prep ingredients a day in advance.
