Ingredients
  

Marinated Chicken
  • 1 lb boneless, skinless chicken thighs or breasts Opt for thighs for a juicier experience, or breasts if you prefer leaner meat.
  • 2 tbsp olive oil Use extra virgin for best flavor.
  • 2 tsp dried oregano Fresh oregano can be used for extra flavor.
  • 1 tsp garlic powder For depth of flavor without fresh garlic hassle.
  • 1 tsp onion powder Adds sweetness without overwhelming.
  • to taste Salt and pepper Sea salt and freshly cracked black pepper are preferred.
Base Ingredients
  • 1 cup cooked rice, quinoa, or your favorite grain White rice, brown rice, or couscous can be used.
  • 1 cup cherry tomatoes, halved Fresh tomatoes brighten the bowl.
  • 1 1 cucumber, diced Use a seedless variety if possible.
  • 1/2 medium red onion, thinly sliced Adds color and a bit of a kick.
  • 1/4 cup fresh parsley, chopped Fresh herbs elevate flavor and presentation.
Tzatziki Sauce
  • 1 cup Greek yogurt Use full-fat for richness or low-fat for fewer calories.
  • 1/2 cup cucumber, grated and squeezed Adds nice texture to the sauce.
  • 2 cloves garlic, minced Elevates the sauce.
  • 1 tbsp lemon juice Freshly squeezed preferred.
  • 1 tbsp fresh dill or mint (optional) For complexity; mix it up!
  • to taste Salt and pepper Simple seasoning for tzatziki.

Method
 

Marinate the Chicken
  1. In a mixing bowl, whisk together olive oil, dried oregano, garlic powder, onion powder, salt, and pepper.
  2. Add the chicken to the bowl and coat thoroughly. Cover and marinate in the fridge for at least 30 minutes or up to 4 hours.
Make the Tzatziki Sauce
  1. In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill or mint (if using), and salt and pepper.
  2. Chill in the fridge while the chicken cooks.
Cook the Chicken
  1. Preheat your grill or skillet to medium-high heat.
  2. Cook the marinated chicken for 6–8 minutes per side until golden brown and fully cooked.
  3. Let the chicken rest, then slice into bite-sized pieces.
Assemble the Bowls
  1. Add a scoop of rice or quinoa to each bowl.
  2. Layer the sliced chicken, halved cherry tomatoes, diced cucumber, and sliced red onion.
  3. Top with a dollop of tzatziki and a sprinkle of fresh parsley.
Serve and Enjoy
  1. Serve immediately or store components separately for meal prep.

Notes

Consider marinating the chicken overnight for extra flavor. Use fresh herbs for the best results, although dried herbs can work in a pinch.
