Method
Marinate the Chicken
- In a mixing bowl, whisk together olive oil, dried oregano, garlic powder, onion powder, salt, and pepper.
- Add the chicken to the bowl and coat thoroughly. Cover and marinate in the fridge for at least 30 minutes or up to 4 hours.
Make the Tzatziki Sauce
- In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill or mint (if using), and salt and pepper.
- Chill in the fridge while the chicken cooks.
Cook the Chicken
- Preheat your grill or skillet to medium-high heat.
- Cook the marinated chicken for 6–8 minutes per side until golden brown and fully cooked.
- Let the chicken rest, then slice into bite-sized pieces.
Assemble the Bowls
- Add a scoop of rice or quinoa to each bowl.
- Layer the sliced chicken, halved cherry tomatoes, diced cucumber, and sliced red onion.
- Top with a dollop of tzatziki and a sprinkle of fresh parsley.

- Serve immediately or store components separately for meal prep.
Notes
Consider marinating the chicken overnight for extra flavor. Use fresh herbs for the best results, although dried herbs can work in a pinch.
