  • 4 slices cheese (Swiss, cheddar, or provolone) Nutty flavor of Swiss is highly recommended.
  • 4 slices of bread (sourdough, ciabatta, or your choice) Feel free to use whole grain or gluten-free bread as a substitute.
  • 2 tablespoons mayonnaise Homemade mayonnaise adds a wonderful richness.
  • 1 tablespoon Dijon mustard A splash of white vinegar can elevate the flavor too.
  • 1 small red onion, thinly sliced Soak in cold water for 10 minutes for a sweeter taste.
  • 1 piece tomato, sliced Adds acidity and freshness; don’t skip this!
  • to taste Butter or olive oil for grilling Be generous for a crispy golden crust!

Method
 

Preparation
  1. Season the chicken: Season chicken breasts with salt and pepper on both sides.
  2. Cook the chicken: Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6 to 7 minutes on each side until fully cooked. Remove and let rest before slicing.
  3. Prepare your veggies: Slice the avocado, red onion, and tomato. Set cheese slices aside.
  4. Spread the condiments: On each slice of bread, spread mayonnaise and Dijon mustard.
  5. Layer the goodies: On two slices of bread, layer sliced chicken, avocado, cheese, onions, and tomatoes. Top with remaining bread slices, mayo side down.
  6. Grill the sandwiches: Heat the skillet or grill pan over medium heat. Add more butter or olive oil, and grill sandwiches for 3 to 4 minutes on each side until golden-brown and cheese is melted.
  7. Slice and serve: Remove from heat, cool for a minute, slice in half, and serve warm.

Notes

Quality ingredients matter; use high-quality cheese and chicken. Leftovers can be refrigerated for up to 2 days. For a vegetarian alternative, replace chicken with grilled portobello mushrooms.
