Ingredients

Main Ingredients
  • 1/4 cup chia seeds Look for high-quality organic chia seeds; they plump beautifully and are packed with nutrients.
  • 1 cup Greek yogurt Choose a full-fat variety like Fage or Chobani for creaminess or dairy-free options.
  • 1 cup milk Any dairy-free alternative like almond or oat milk works great.
Sweetener and Flavorings
  • 2 tablespoons honey or maple syrup Adjust the sweetness to your liking!
  • 1 teaspoon vanilla extract Use pure vanilla extract for a more robust flavor.
Toppings (optional)
  • Fresh fruit Berries, banana slices, or a dollop of nut butter.

Method

Preparation
  1. In a bowl, combine 1 cup of Greek yogurt and 1 cup of milk. Whisk until smooth and creamy.
  2. Stir in 1/4 cup chia seeds, 2 tablespoons honey (if using), and 1 teaspoon vanilla extract, ensuring chia seeds are evenly distributed.
  3. Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 4 hours or overnight.
  4. When ready to serve, stir the pudding to break up clumps and serve topped with fresh fruit.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. The pudding may thicken further; add more milk when serving. Make ahead for busy mornings or snacks.
