Ingredients
  

For the Cauliflower
  • 1 medium head cauliflower (about 800 g / 28 oz) Look for firm, dense heads with tightly packed florets.
  • 3/4 cup water This will create steam for cooking the cauliflower.
  • 1 tablespoon unsalted butter Use quality butter for the richest taste.
  • 1 teaspoon garlic powder Fresh minced garlic can also be used.
  • 1 teaspoon paprika Smoked paprika can add a wonderful depth of flavor.
  • 1 teaspoon salt Adjust to taste, especially if using salted butter.
  • 1 teaspoon ground black pepper Freshly ground is always best.
  • 1/3 cup grated sharp cheddar cheese Use aged cheddar for a bolder flavor.

Method
 

Preparation
  1. Wash and cut the cauliflower into small, bite-sized florets.
  2. Heat a large pan over medium heat and add the cauliflower along with the water. Cover the pan with a lid to create steam and allow to steam for about 5-6 minutes until just tender.
Cooking
  1. Remove the lid and add the butter, garlic powder, paprika, salt, and pepper. Toss the florets to coat them evenly.
  2. Spread the florets in a single layer and let cook undisturbed for 2 minutes at a time until golden and caramelized.
  3. Turn off the heat and sprinkle cheddar cheese over the top. Toss gently to mix, cover again, and let sit for 1 minute to allow the cheese to melt.
  4. Uncover and give everything one last gentle toss. Adjust seasoning with more salt and pepper if needed and serve warm.

Notes

Don't overcrowd the pan to ensure even caramelization. Store leftovers in an airtight container for up to 3 days.
